Ingredients

  • 100g sultanas
  • 75ml spiced rum
  • 175g plain flour
  • 2 tsp baking powder
  • 0.5 tsp bicarbonate of soda
  • 125g unsalted butter, melted
  • 150g sugar
  • 2 large eggs
  • 4 small very ripe bananas (about 300g without skin), mashed
  • 60g chopped pecans
  • vanilla extract

Method

  • Put the sultanas and rum in a small saucepan and bring to the boil.
  • Remove from the heat and leave to absorb for about an hour

  • Preheat oven to 170C
  • Put the flour, baking powder, and bicarbonate of soda in a medium-sized bowl and, with hands or wooden spoon, mix well
  • In a large bowl, mix the melted butter and sugar, and beat until blended
  • Beat the eggs in one at a time, then the mashed bananas
  • Then stir in walnuts, sultanas, and vanilla extract
  • Add the flour mixture, a third at a time, stirring well after each third
  • Scrape into a lined loaf tin (20ish x 10ish x 7ish cm) and bake for 60-75 minutes
