Banana Bread

Ingredients
- 100g sultanas
- 75ml spiced rum
- 175g plain flour
- 2 tsp baking powder
- 0.5 tsp bicarbonate of soda
- 125g unsalted butter, melted
- 150g sugar
- 2 large eggs
- 4 small very ripe bananas (about 300g without skin), mashed
- 60g chopped pecans
- vanilla extract
Method
- Put the sultanas and rum in a small saucepan and bring to the boil.
- Remove from the heat and leave to absorb for about an hour
- Original recipe says to drain the rum, but no
- Preheat oven to 170C
- Put the flour, baking powder, and bicarbonate of soda in a medium-sized bowl and, with hands or wooden spoon, mix well
- In a large bowl, mix the melted butter and sugar, and beat until blended
- Beat the eggs in one at a time, then the mashed bananas
- Then stir in walnuts, sultanas, and vanilla extract
- Add the flour mixture, a third at a time, stirring well after each third
- Scrape into a lined loaf tin (20ish x 10ish x 7ish cm) and bake for 60-75 minutes
