Ingredients
- 1 kg diced braising steak
- 2 medium onions cut into wedges
- 2 red peppers, deseeded and chunked
- 2 cloves of garlic, peeled and crushed
- 225 g chorizo ring, thickly sliced
- 1 tsp crushed dried chillis
- 1 tsp ground cumin
- 2 tsp smoked paprika
- 800 g chopped tomatoes (2 standard tins)
- 2 tbsp tomato purée
- 800 g kidney beans (2 standard tins), drained and rinsed
Method
- Set the oven to 160C
- Brown the meat and transfer it to a casserole pot
- Fry the onions for 5 minutes
- Add the peppers, garlic, chorizo and spices and fry for 5 minutes
- Add the tomatoes and tomato purée, mix and heat
- Transfer to the casserole pot, bring it all to the boil, cover it, and put it in the oven for 2-2.5h until the beef is tender
- Add the beans, warm on the hob for 5 minutes, then serve with fresh crusty bread
