Ingredients

  • 1 kg diced braising steak
  • 2 medium onions cut into wedges
  • 2 red peppers, deseeded and chunked
  • 2 cloves of garlic, peeled and crushed
  • 225 g chorizo ring, thickly sliced
  • 1 tsp crushed dried chillis
  • 1 tsp ground cumin
  • 2 tsp smoked paprika
  • 800 g chopped tomatoes (2 standard tins)
  • 2 tbsp tomato purée
  • 800 g kidney beans (2 standard tins), drained and rinsed

Method

  • Set the oven to 160C
  • Brown the meat and transfer it to a casserole pot
  • Fry the onions for 5 minutes
  • Add the peppers, garlic, chorizo and spices and fry for 5 minutes
  • Add the tomatoes and tomato purée, mix and heat
  • Transfer to the casserole pot, bring it all to the boil, cover it, and put it in the oven for 2-2.5h until the beef is tender
  • Add the beans, warm on the hob for 5 minutes, then serve with fresh crusty bread
