Ingredients

  • 1kg potatoes
  • 100ml vegetable oil
  • Flour

Method

  • Peel potatoes and chop into even-sized chunks
  • Heat oil / fat in a large roasting tray at 200 C
  • Boil the potatoes in lightly salted water until done
  • Drain the potatoes in a colander, shaking and tossing with flour until thoroughly roughed and floured
  • Put the potatoes in the roasting tray, tossing so they’re covered in oil
  • Roast the potatoes for 15 minutes, then take them out and turn them
  • Roast the potatoes for another 15 minutes, then take them out and turn them yet again
  • Roast the potatoes for another 10-20 minutes until they’re crisp and golden brown
  • Serve lightly salted
