Ingredients
- 1kg potatoes
- 100ml vegetable oil
- Flour
Method
- Peel potatoes and chop into even-sized chunks
- Heat oil / fat in a large roasting tray at 200 C
- Boil the potatoes in lightly salted water until done
- Drain the potatoes in a colander, shaking and tossing with flour until thoroughly roughed and floured
- Put the potatoes in the roasting tray, tossing so they’re covered in oil
- Roast the potatoes for 15 minutes, then take them out and turn them
- Roast the potatoes for another 15 minutes, then take them out and turn them yet again
- Roast the potatoes for another 10-20 minutes until they’re crisp and golden brown
- Serve lightly salted
